Reserve Semillon Ice Wine
Ice wine is one of the world’s rarest dessert wines. In order to make it, vintners must leave grapes on the vine until they freeze. In eastern Washington, this requires a Canadian arctic air mass and temperatures of 19°F or below. Brrrr!
Once pressed, the frozen grapes yield sweet, concentrated juice and very little water. The result is nectar in a glass – a complete dessert in itself or a decadent accompaniment to other sweets.
At Covey Run, we’ve had 23 years experience making ice wine. Our first vintage, released in 1984, was made from Riesling grapes. Since then, we’ve produced ice wine only in years when Mother Nature ‘blessed’ eastern Washington with frigid winter temperatures.
Building on the success of our Riesling Ice Wine, we produced our first Semillon Ice Wine in 2002 – one of only a handful ever produced in Washington State.
Ice Wine is a scrumptious treat on its own or it can be delightfully paired with other desserts. We suggest enjoying Covey Run Semillon Ice Wine with: fresh fruits, especially strawberries, cream-based pastries, crème brulée and rich, creamy cheeses like Roquefort or Stilton.
